We've stayed Thanksgiving week before, and we will be doing it this year too! It's really not all that bad. Last time, it was very light in the parks until WED/THURS. And, even then, the crowds are usually manageable with common sense and flexibility.
Also, AKL is amazing. Boma and Jiko are two of my favorite restaurants, plus the counter-service option there is definitely a step above most. Plus, you just feel awesome waking up and looking around every morning. Even heading out towards the bus stop is fun when you get to go through that lobby.
Suggestions:
You might want to get back to the hotel early on at least one night and sit at one of the fireplaces that overlook the savannah.
Jiko is amazing. It's expensive (though you might be on Free Dining?), but it's very worth it --- especially if you want a more reserved/quiet/romantic type of meal.
The bar is pretty decent, and it's a great place to go after the parks or while you're waiting to be seated at Boma/Jiko.
Finally... for the 'busy' days: get up early, hit the parks and do your dining or resting when then crowds (and weather) start getting to be a bit more difficult. When you're re-charged, go back out to the parks to get the night-time atmosphere. (Also, hope for extended hours! Last time we were there for Thanksgiving week, there were multiple times that MK was extended to midnight.)
