re: BTMR, well I'll be there late November, so maybe I'll get lucky.
You have changed my mind about Astro Blasters, I'll probably do that one. I'll definitely like to see the unique things in Fantasland, however, I hate Mr. Toad's ride with a passion, so you couldn't pay me to ride it.
As far as Fantasmic or Fireworks- I guess it will depend on what is happening when midweek in November.

Definitely didn't think to look at your dates LOL. Thunder will be open during your stay. Before this refurb, the ride was the same as Florida's, just a mirrored version. I don't know what it'll be like after this refurb.

If Remember (firework show) is playing during your stay, you MUST see it.

Read up before you go. Get the official and unofficial guidebooks. The official one will help you to know the parks while the unofficial one will help you plan. Also make sure you study the maps. The layout of DLP is different than MK (for example, Pirates is next to HM is next to Splash).

For RSR, I recommend the singles line. The wait is usually around 20 minutes. And make sure you see World of Color and the fireworks at DLP. You can see Fantasmic if you want to, but put World of Color and the fireworks at the top of your list since you only have two days. Fantasmic is similar to the WDW version (not identical) and can be hard to find a spot to watch it from.
The wait is usually around 40 minutes.

Technically, being mirrored makes it NOT the same. However, that aside, there are a few differences, but even if it were the same I don't see why anyone would skip it.

An excellent idea- thank you very much. WoC and RSR are definitely on my must-see list. What other attractions have a single rider line?

As for Soaring, I was thinking I'd skip it- as we have that here in Orlando. I want things that aren't in WDW, or are at least different enough to make it worth it- like for instance I'll definitely check out Pirates and Small World, but I'll skip Jungle Cruise, Peter Pan, Space Ranger spin, Tough to be a Bug, Mr. Toad (especially that one). I hear Space Mountian is different enough to warrant a ride- is that right? What about BTMR?

Thanks for the wikimapia link.

Soarin' is only slightly different than in Epcot (the queue is like an old airplane hanger, Patrick Warburton says "Soarin' Over California" instead of "Soarin' ", the print is generally cleaner), but the time investment required is generally much less in DCA. The wait is usually around 15-45 minutes and FP's are available for most of the day.

Since you're by yourself, single rider is probably the way to go for Racers. You're probably looking at a 15-20 minute wait in single rider (the 3 and 3 seating makes lots of opportunities for single riders, like Test Track). I didn't check Touring Plans, but since you're going the week before Thanksgiving and Wednesday-Thursday, I'm guessing the crowds will be pretty low. Even with a FP, you're looking at a 10-15 minute wait to get the FP first thing in the morning, and then a 10-15 minute wait to redeem it.

California Screamin' has a single rider line, too. My memory is a little fuzzy, but it definitely does, and I think you have to like ask the attendant at the entrance and they'll give you a single rider pass and tell you where to go. You have to take an elevator, IIRC

Space Mountain is definitely worth a ride. The idea is the same, but it's a completely different coaster and there is a soundtrack by Michael Giacchino synchronized to the ride, not the random area music that they put in at WDW. There was a bad management team at DLR for a while and they didn't take care of the rides (even resulting in some deaths), and the old Space was ready to fall apart. It was closed for 2.5 years because of the unplanned replacement. So it really is a totally different coaster.

Edit: and BTMRR will be brand spankin' new out of a refurb when you get there and the rainbow caverns are unique from the MK version. I think it'll be worth a ride.

Here's a list that I made for another poster who was a WDW vet. It's my take on the must-sees for a WDW vet who wants to skip clones or inferior versions. Their circumstances were a little different, as they were going in July with kids, but the majority of the advice is still valid. The only change I would make is replace Tom Sawyer Island/Autopia with Mansion (because of Haunted Mansion Holiday) and BTMRR (because it'll be fresh off a major refurb). Buzz is awesomer because the targets have shapes that relate to their point values, there are lit-up targets that are worth extra, there's a hidden target in one of the hallways between rooms, and YOU CAN PICK UP THE BLASTERS! If you do all of the stuff on these lists (again, swapping out TSI/Autopia), you'll be off to a darn good start.

Disneyland
1. Indiana Jones and the Temple of the Forbidden Eye
- You won't believe this is basically the same ride as Dinosaur.
2. Space Mountain
-A smooth, modern coaster with a ride-synchronized soundtrack by Michael Giacchino.
3. Pirates
- So much more to it in CA: more drops, the bayou scene, the better audio, and MORE RIDE.
4. Toontown
-Roger Rabbit is a good dark ride and the whole land is neat. It's the version that woulda coulda shoulda gone to DHS off of Sunset Blvd.
5. Fantasmic!
-When you only had one night, I was going to suggest skipping this, but it really is a lot better than Florida's. It has clearer water projections, a cool Peter Pan scene, and an IMPRESSIVE dragon. I haven't bothered to go to the DHS version in a while, but I love the DL version.
6. Buzz
-This is another one that I don't love in Florida, but am crazy about in California (just look at my username/avatar if you don't believe me!). It is a very similar ride, but it has several smallish touches that really let the ride live up to its potential... makes it a completely different experience for me!
7. Autopia and Pirates Lair at Tom Sawyer Island
-I bunched these together for two reasons: your 7YO will probably really enjoy these even though you wouldn't be going on them if you were on a solo trip, and these attractions would never be built like this today. The piratey additions to the Island are actually worthwhile, and make sure you check out the caves: they're different than the ones in MK and there's actually some tight squeezes! They are anti-ADA. It makes it feel a little more like you're really exploring; there was at least one spot where my 6YO could fit, but I couldn't (I haven't missed any meals, but I'm not a really big guy). The Autopia is SO much more than the four left turns you get on the Tomorrowland Speedway. There's bridges and underpasses, the cars take different routes through a very green area, and the monorail goes right overhead. I don't remember whether it was the monorail track or another part of the Autopia, but there was an overpass over our car that was low enough to easily touch. You'd never build something like that today!

California Adventure Must-Sees
1. Radiator Springs Racers
-It MUST be experienced! Get in line for Fastpasses before the park opens.
2. World of Color
-I recommend getting some counter service food and getting there as soon as the Fastpass return window opens; being right next to the water made it a completely different experience for me. The show towers over you! For a daytime taste, check out Instant Concert-- Just Add Water!
3. Aladdin
-It's easy to skip because there's only so many shows and you may not find yourself in that corner of the park at the right time. I myself spent three weeks' worth of time at DLR before I actually saw this show... now I regret it! Especially since you have two days and especially since your wife likes the Beauty and the Beast show... don't make the same mistake I did!
4. Monsters, Inc.: Mike and Sulley to the Rescue! and Mermaid
-both high quality (though not mind-blowing) dark rides that shouldn't have long lines. Monsters, in particular, holds a special spot in my heart because it is a creative retheme of a disastrous ride called Superstar Limo. Look it up on Youtube after you ride Monsters! Monsters has a lot of "tricks" packed into a little ride: projection mapping, multiple scents, as well as an interactive animatronic.
5. California Screamin'
-Spiritual sibling to Rock 'n' Roller Coaster: a launched steel coaster with an inversion. This one is completely outdoors with a long track and unique layout, though, so it's obviously different. Try the single rider line if your 7YO isn't tall enough.
6. Animation Building
-Even if you don't do any of the activities, it's worth it just to look at the beautiful screens in the lobby filled with backgrounds, concept art, clips and sketches that showcase various animated movies one at a time. Plus, the air conditioning will feel pretty good in July.
7. Cars Land lighting ceremony
-Grab yourself a snack at the Cozy Cone, find a spot on a bench right at sunset and wait for "Shh-Boom" to start.

re: Soarin' - ah yes, I hadn't thought of that. I am so used to Soarin' being a major investment of time, it never occured to me that it might just have a 15 minute wait. That one is back on the list. Ditto with Space Mtn, and BTMR. Very excited about Cali Screamin' and the DR railroad as well- just read something about the Grand Canyon being on the RR.

I agree. I went four years ago and it was open and I did it quite a few times. We weren't entirely disappointed that it was closed this time since we'll be in WDW in four weeks, but it's worth it.

Awesome list, thank you so much! Just what I was looking for. I'm gonna copy this (remove the references to 7y.o. LOL) and print it out to bring with.

I forgot about the Railroad. It's very good and different. The Grand Canyon diorama is cool, and the Primeval World is like a little taste of Universe of Energy.

Disneyland
1. Indiana Jones and the Temple of the Forbidden Eye
- You won't believe this is basically the same ride as Dinosaur. So much better!!! There are not words to describe how I feel about this one
2. Space Mountain
-A smooth, modern coaster with a ride-synchronized soundtrack by Michael Giacchino. Definitely worth it!
3. Pirates
- So much more to it in CA: more drops, the bayou scene, the better audio, and MORE RIDE. I didn't notice the better audio, but the rest is 100% true. I think someone once referred to the one in WDW as Pirates of the Caribbean: Lite
4. Toontown
-Roger Rabbit is a good dark ride and the whole land is neat. It's the version that woulda coulda shoulda gone to DHS off of Sunset Blvd. Again, agreed
5. Fantasmic!
-When you only had one night, I was going to suggest skipping this, but it really is a lot better than Florida's. It has clearer water projections, a cool Peter Pan scene, and an IMPRESSIVE dragon. I haven't bothered to go to the DHS version in a while, but I love the DL version. I enjoy both versions. But I liked World of Color better than Fantasmic. The limited space and difficult viewing bothered me. While the Pan scene is cool, from certain angles it's hard to see. Take it or leave it
6. Buzz
-This is another one that I don't love in Florida, but am crazy about in California (just look at my username/avatar if you don't believe me!). It is a very similar ride, but it has several smallish touches that really let the ride live up to its potential... makes it a completely different experience for me! I think it's worth riding, but it's not as good as Space Ranger Spin. Too few targets in the room. I did like that they label the targets with the shapes. So if you know which shapes are higher, it's good
7. Autopia and Pirates Lair at Tom Sawyer Island
-I bunched these together for two reasons: your 7YO will probably really enjoy these even though you wouldn't be going on them if you were on a solo trip, and these attractions would never be built like this today. I myself spent three weeks' worth of time at DLR before I actually saw this show... now I regret it! Especially since you have two days and especially since your wife likes the Beauty and the Beast show... don't make the same mistake I did! Best theme park show. Ever. Period. I think we were the only ones in the audience who got it when the genie called Iago a "Tiki Bird reject on fire!" and sent him offstage, on fire.
It's a very neat ride and has an interesting queue. Mermaid is exactly the same as the one in WDW, so if the OP is going to WDW anytime soon and has limited time, it could be saved.
5. California Screamin'
-Spiritual sibling to Rock 'n' Roller Coaster: a launched steel coaster with an inversion. This one is completely outdoors with a long track and unique layout, though, so it's obviously different. Try the single rider line if your 7YO isn't tall enough. Very nice, long roller coaster
6. Animation Building

Plus, the air conditioning will feel pretty good in July. We skipped this one. That, and I needed no air conditioning. I was cold in June half the time! It was so cloudy and breezy. I'd be warm, then suddenly cold and vice versa.
7. Cars Land lighting ceremony
-Grab yourself a snack at the Cozy Cone, find a spot on a bench right at sunset and wait for "Shh-Boom" to start. Can't believe I missed this!

You forgot Matterhorn! It's a classic not to be missed. Not to mention the first steel roller coaster.

Small World is one I recommend. The additional Disney dolls are neat and the rooms are different from WDW. Also don't forget Mr. Toad's, Pinocchio, Snow White, and Alice in Wonderland.

I like having the mountain there, but the Matterhorn ride itself is kinda "meh" to me. The ride vehicles themselves are like the WDW Space Mountain, plus many people say they like the ride less after the refurb. The splashdown is cool, though.

There are tons of other things that are good for WDW vets; I think Small World and the extra Fantasyland dark rides would be next on the list. I was not looking forward to the addition of the characters to IASW, but it was done so well that I didn't even notice them all on my first ride. Aaaaand also noticed: it will be decorated for Christmas during the OP's dates... Small World Holiday is not to be missed!

I love love the Aladdin show. When I was there in November, the Genie was making jokes about the demise of Twinkies and the Lucasfilm/Star Wars acquisitions almost immediately after they happened. That show never gets stale; I can see why people freaked out when they wanted to toss Toy Story: the Musical in there.

I also like World of Color better, but Fantasmic! is much nearer to my heart than I thought it would be going in. WoC is different than any nighttime show you're used to, which I think helps it, and the colors are absolutely stunning. The fountains tower over you and the whole Pier gets in on the show; it's epic scale crammed into a tiny space. Fantasmic! has Pan and Hook fighting and swinging around on a moving ship, the Mark Twain in the finale, the DRAGON... what's not to like? It can get crowded, but I just kinda weaseled my way in somewhere. Now that I'm thinking about it @jensenrick , you probably shouldn't get too attached to the idea of seeing Fantasmic... it will likely only run on the weekends when you're there. It's the downside of the slow weekdays. WoC should run every night, though. :)

As for another unique Disneyland experience, how about buying your Dole Whip from inside the queue for Tiki Room and eating it during the show? You're allowed to take your Dole Whips into the DL Tiki Room. :D

Yes, I'm very excited to see the holiday versions of Small World, and I'm assuming Haunted Mansion as well?
re: Fantasmic- not too concerned about that one anyway. The Aladdin show sounds like a must-see however.
Probably won't get a Dole whip. As a diabetic, I tend to stay away from pineapple based products, they really spike me.
But I have been known to "cheat" and have a Citrus swirl. Do they have those?

I don't think they have the Citrus Swirl, but it's possible they might have the orange Dole Whip if that also floats your boat.
