We are still a ways out from our 180 day mark but are trying to decide on what to use for our 7 days of sit down meals. We are thinking:
1) 50's prime time (lunch)
2)Chef Mickeys (breakfast)
3)Crystal Palace (breakfast)
4)Le Cellar (Lunch)
5) Whispering Canyon (dinner)
6)O'Hana (dinner)
7)undecided*

What about you, what do you have plans for? or are always included?

Outside of what you already have listed, we generally always go to Liberty Tree Tavern, Le Chefs de France, Tepan Edo, and CRT.

We have 10 nights and so far have booked for dinner at:

California Grill - unmissable as far as I'm concerned
Yachtsman - friend is a steak freak
Crystal Palace - daughter is a Tigger freak
Rose & Crown - wanted dinner at Epcot
Hollywood and Vine - for Fantasmic, never been before and a bit dubious about it!
Raglan Road - love it

You have some good choices there. Might I suggest Via Nappoli for the seventh day? Seems to be a pretty polarizing restaurant when it comes to these boards, but that's also the case with most of the places at WDW any way. Via Nappoli isn't just pizza, they have some good dishes there as well.

when we do the deluxe dining plan we always book all our dinners first and almost exclusively book signature venues, then with the leftover credits we start booking either early lunches or once in a while a breakfast. usually we pay oop for breakfast for use snack credits though because we're not big breakfast eaters. we usually book an early lunch and a later dinner. we go in less than a week for 7 days and we have...
day 1 dhs park day: brown derby lunch, flying fish dinner
day 2 mk park day: kona lunch, citricos dinner
day 3 epcot/ak split day: le chefs lunch (not my fav but my sister loves it), dinner jiko
day 4 mk day: the wave lunch, artists point dinner
day 5 unsure what park: snack credits lunch, yachtman's dinner
day 6 epcot park day: le cellier lunch, snacks and lots of margaritas at la cava in place of dinner (oop of course)
day 7 split epcto/mk day: via napoli lunch, ohana dinner

Since January is shorter park hours we decided NOT to buy the park hopper and stay in each park to closing. It will save lots of money this time. We used to eat at
Ohanas
Whispering
Boma

Never again they were the worst places all 3 years we went to. Its a shame as Ohannas has really gone down hill in taste and especially service. Boma never was good to us 3 times we tried it so its not like we gave it a chance
Whispering skillet is just too fatty now.
Loved Tutto but they will be refurbing
Nine Dragons is good but SIL does not like Asian anything.
That means we sneak in Yak and he eats steak and shrimp which taste nothing like Asian..
