We have a 10:55am reservation for Steakhouse 71. It is categorized as a Breakfast reservation. What are the chances they will let us order from the lunch menu?

I don't think I've ever been seated on time for an ADR at Disney. I think your odds of ordering off of the breakfast menu is slim and zip.

Not very likely. We also had a 10:55 reservation thinking that lunch began at 11. The breakfast menu was brought to us when we were seated at 11:05. We asked our server if we could order a sandwich (we knew in advance what we wanted and both of us wanted the same sandwich) and she had to ask the chef if he would accommodate us.

He did agree (likely because the restaurant was not busy) but we decided we would not try doing so again.

The worst they can say is no, and you wind up having breakfast. It can't hurt to ask, but you have to go in being willing to accept either outcome. I know it's no longer the Wave and all kinds of things have changed, but it was very common in the past to get something from one menu during another meal time. So, it might even be good to go in with a specific ask in mind if you saw something really appealing.
