If you place a deposit on package and then a discount is released you can call and they will give you the better pricing, based on availability. That is something that we do for our clients as a TA, apply those discounts when possible.

Take into consideration your families eating habits, desire to do dinner shows or character doing, and these of budgeting for the vacation. I like knowing that everything but the gratuity is paid for before I leave.

With older children I definitely recommend the Park Hopper. Like it was said before your resort location is walkable to many different attractions. Plan you Fast Passes ahead of time and you will be able to relax bit knowing you will get to all your must sees attractions :)
