I give you lots of credit for traveling to WDW with a 6 week old! I tried to avoid leaving the house at all when my kids were 6 weeks old!

I typically stay 4 or 5 nights. You can't do everything in that amount of time, but you can do a lot. That said, if you make a 6th night work, I would go for it.

I would do 1 full day at MK and split the other day between MK and another park. If it were me, I would do AK, but given that you have ruled that one out, I would do MK in the morning and then DHS in the afternoon/evening (make sure to see Fantasmic!).
