I have never been in the waters around Florida at those times of the year but, I would think that since it is more south that the water temps would be higher. I don't know this as fact though.

I have been to the Carolinas in May and the water was fine, of course I am from Michigan and swim and SCUBA in some cold waters.

And I would add that the Swan/Dolphin have the most comfy beds in WDW. At least that is my experience.
