Thanks for the time update! I'm hoping my family and I can get some done if we get there early! We have a park hopper, so once we are done in the early morning we will head somewhere else.

I have never done the boat from DHS to Epcot..where can I find that? That seems like a much better option! Thanks for that tip :) And as far as food goes, I think my family is probably gonna stick to quick service for meals so that we can utilize all of are time wisely.
