As far as visiting resorts, it's a quick detour out the International Gateway at Epcot to visit Beach Club lobby and Boardwalk. Very nice displays. Some great places out there for lunch as well.
Also, take a stop off the monorail at GF to see the Gingerbread House and tree there!
From your FQ resort, you can arrange for a winter carriage ride ("sleigh" rides are only from WL) that can be fun. I know they originate from POR, think FQ as well.
