They already are. Most are already appealing because they don’t have IP slapped everywhere.

I share the IP fatigue sentiment. But not that DLP's hotels are a match for WDW's. Only the Sequoia and Disneyland Hotel can match anything morerate or above at WDW. And there's nothing to rival the Poly, Contemporary, Crescent Lake - despite two decades of efforts to destroy these erstwhile paradisical environments.

Right now, if you offer me the choice between whatever number of days at the Coronado or any DLP hotel but you can't leave the hotel premises, I don't need to think for a second.

I have only stayed at Sequoia, but I have visited Hotel New York after the Marvel make-over. It gave the impression of being more up-market than Sequoia.

But yes, they are hotels not resorts. And there is no need for an onsite resort imo.

How much of that is because Florida is just warmer and supports these large sprawling resorts, though?

I think Coronado transplanted to Disneyland Paris would be pretty unpleasant for most of the year. It makes a lot more sense in Paris to keep things compact and indoors.

That obviously doesn't mean it is wrong to prefer the resort experience you get in Central Florida to what you get in Paris, but I think that is different from the hotels themselves not being at the same level. While I am not particularly interested in Marvel, I would also think Hotel New York would be an obvious inclusion to your list and probably others. I also didn't really have any complaints about Cheyenne or Santa Fe and preferred the indoor set-up to the motel-style of the Florida moderates.

Santa Fe is the most sprawling of all DLP's hotels (other than Davy Crockett) and just the walk from the river to the main lobby building in Winter can feel so far away, especially after walking back from a long day at the parks.
I don't mind the IP integration at most of DLP's hotels, as they are mostly subtle references to Disney IP that can be found in the rooms vs taking over the whole hotel like Art of Marvel did.

What DLP hotels need is a grab-and-go food option

Santa Fe and Cheyenne have an on-site Starbucks, but there's no comparable option at Newport

I guess at New York you're so close to the Village it doesn't matter, but even then some places don't open before 8:00am

If you're hungry at Newport and don't want to drop 50 euro on food, you need to take that walk

We are 100% NOT rope drop people at WDW!

But staying at Sequoia, we had no problem leaving the hotel, eating breakfast at EoS and getting to the parks for early magic hour.

That said, it would be nice to have a grab and go option at the resort hotels. If only for a change.
