I'm planning a trip for next May, mid-month. Will Fantasmic! likely only be Friday-Sunday, or could it possibly be every night? What about other entertainment? I'm planning park days Tuesday-Friday so want to be prepared for if I have to miss something.

I'm planning a trip for next May, mid-month. Will Fantasmic! likely only be Friday-Sunday, or could it possibly be every night? What about other entertainment? I'm planning park days Tuesday-Friday so want to be prepared for if I have to miss something.

Fantasmic will almost certainly be Fri-Sun only. The current plan is for Paint the Night and Disneyland Forever to run nightly for the duration of the Diamond Celebration, which will likely still be going on in May 2016, although it's possible Forever could be relegated to weekends only at that point if things don't go as well as planned. WOC runs nightly year round.

That would really hurt my plans if Disneyland Forever goes to only weekends. If that happens, would I be better off seeing that instead of Fantasmic!?

You can see both on the same night. Just get a Fastpass for the 10:30pm Fantasmic and watch Disneyland Forever from the hub or Main Street - ideally from somewhere closer to Frontierland, as that's where you'll be headed to get to Fantasmic once Forever is over. It's not ideal, but it's an option.
