Cornish hen to chicken

Surprisingly I have never tried cornish hen! Not sure why. How is it? I've had pheasant, quail, dove, and others. Are any comparable?

A cornish hen is a hybrid chicken. The name implies that it is a game bird, like a duck or some other species, but it's not. It's just a mixed breed that is very small and matures slowly.

So, basically, a skinny chicken, and that's what it tastes like, and exactly how you should cook it (like a roasted chicken...it's too small to even bother butchering)...

It commands a higher price due to misconception branding, much like name brand over the counter pain relievers do vs store brand.

The other birds you listed are all game birds, and have quite distinct tastes (though I've never had dove, but I have...oddly...had pidgeon, which...was terrible...much like the bird version of squirrel).

I've never been able to taste the difference and don't like having to cut the little hen up, so much prefer chicken. :)
