I have never had sushi (raw fish scares me) but I was willing to try it this trip, as long as I could find something with cooked shrimp in it. (I know, Im a coward LOL)

You're allergic to shellfish?!! Oh you poor man, I could eat my weight in shrimp or lobster tail!!!! (I am sure I came close a few times too!!) Isn't there a vegetarian roll? I'd be willing to try that as well.

Well I had a reaction a couple times, but it was never clear if it was actually shellfish that did it, I keep meaning to get a proper test done but keep putting it off

I would take caution as well, if you have any type of reaction, I would shy away
I always do although after doing a Dis cruise last year it is starting to get to me so I will prob get the tests done before next year! Fingers crossed :)

Spicy tuna is really good and they have it at most places. Usually a roll with raw tuna and a spicy sauce. Believe it or not the eel is a tasty animal. If that is too exotic stick with the basics like tuna and salmon. You may want to mention the shell fish allergy to the server. They might use the same knives and cutting area to cut shrimp and crab that they prepare the other sushi. We had a few roles as appetizers at the Kona cafe my last visit. I think we got the volcano roll which was spicy tuna with shrimp and something else. You could probably get it without the shrimp or pick something else. The sushi was not the best I have ever had, but it was still really good.

I'll second the spicy tuna. It's pretty common and delicious. The spicy sauce is usually a spicy mayonnaise concoction. Anything with salmon is also a must-do for me. You can go to Kimonos at the Swan and get some of the normal American sushi offerings. The Bagel Roll (smoked salmon, cream cheese and cucumber) is good, as is the Spicy Rainbow Roll (spicy tuna, salmon and avocado). I also second mentioning your shellfish allergy to your waiter. The possibility of cross-contamination is a very real one.

I have a shellfish allergy...although it's strange b/c it's bivalve specific. I'm still debating about listing it on our adrs for this trip b/c I got into a battle with a chef last trip who refused to serve me shrimp. It drove me nuts trying to explain to a "food expert" that shrimp are shellfish, but are not bivalves! I know it's all liability, but still.

Tuna and Salmon are the starter fish I always recommend to people who have never tried sushi. I would always bring up the allergy in a dining situation if you can see they serve anything involving shellfish (which they usually do, since crab, shrimp and scallops are quite common). I really enjoyed what I ordered at Cali Grill last trip.

And this would be safe for your to eat.
Yuzu Marinated Sashimi - Yellowfin Tuna, Salmon, Hamachi, Snapper, Wasabi Oil

Tuna Three Ways and Tempura Malibu Roll would also work if you headed to Cali Grill.

I didn't eat the sushi at the Poly, but the options looked fairly tame.

The options at Starring Rolls looked tame too, but I think more of their options contain shellfish.

I love a Philly Roll with imitation crab stick instead of salmon. If you want the salmon it is good with it but I just prefer the imitation crab stick in my sushi as apposed to real fish. Philly rolls are avocado (sometimes cucumber) with cream cheese and whatever fish (or in my case imitation crab) you choose. They are traditionally Salmon but I've seen it with other things. Also ask for it inside out. That means the rice is on the outside of the seaweed which in my opinion makes all sushi 10 times better.
