One ride to bring back

I'd bring back the original Journey into Imagination, then immediately take it down for a full-budgeted honest-to-goodness refurbishment; keeping the guts of the attraction intact while sprucing it up in a big way.

If not that, then Cranium Command (and the rest of Wonders of Life).
If not that, then The Timekeeper.
If not that, then The Enchanted Tiki Room.
If not that, then The Hunchback of Notre Dame.
If not that, then the Mickey Mouse Revue.
If not that, then the original Animation Tour.
If not that, then the original Backlot Tour.
If not that, then Legend of The Lion King.
If not that, then Tapestry of Nations.
If not that, then Sorcery in the Sky (nightly).
If not that, then Food Rocks!
If not that, then 20000 Leagues Under the Sea.
If not that, then The Skyway.
If not that, then If You Had Wings.
If not that, then the original O' Canada!
If not that, then Kitchen Kabaret.
If not that, then Communicore.
If not that, then Ice Station Cool.
If not that, then The Living Seas.
If not that, then Monster Sound Show.
But if I could have Horizons back, then that would definitely be it.

I'm gonna assume that Horizons will be the overwhelmingly popular answer here.... so I'm gonna be original and say World of Motion! Horizons and WoM were always my 2 favorites at Epcot growing up.

Horizons without even a 2nd thought!

As long as Disneyland still has Mr. Toad its Horizons all the way!

Unfortunitly I might not make it to Disney Land so I'd go with Mr. Toad's Wild Ride or World Of Motion. Love them both.
