I just thought it was weird that there were like 4 different lavender drinks on the menu and not one typical iced coffee. At least when I checked it out shortly after it opened.
You could get a cold brew, iced latte, or iced Americano. The espresso drinks were a bit inconsistent in my experience but when made right they were very good.

Were they on the menu? Don’t remember seeing them. The issue is when you have like 9 drinks and 4 of them are Lavender now I’m thinking ok this is the lavender coffee place and I’m not into that flavor. Especially when I don’t see some of the typical options like an iced vanilla latte.

I also still haven’t tried the chicken sandwich formerly known as the $18 fried chicken sandwich from next door to Sip n Sonder. Anyone try it? How is it? I alarmist did once but it looked dead/ sad and there were no smells coming from the kitchen. Felt… sterile.

Sure… but only if you order it. You could get a black drip at sip.
I'm sure that's true, but my point wasn't about my personal coffee preferences. I was wondering why Disney would move from a product that was a consistent earner for them (likely because most people are familiar with Starbucks and know what they will be getting, even if it isn't their favorite place) and switch to a small outfit with less familiar coffee, fewer choices, and higher prices.

Ideally there would be a non-Starbucks coffee option at Downtown Disney. Blue Bottle would be awesome!

I liked being able to get a good quality latte at sip - but I’m also not surprised they didn’t make it.

Interesting - since it was connected I always thought it was owned by them anyways.
Here is the presser portion for Sip and Sounder they also have locations in Inglewood and Downtown LA. Seems each downstairs locations is owned / operated individually. Upstairs is owned by Parkside Market.

I wonder if it was just a licensing deal and that’s why it’s just going to the “park side” brand? Certainly all of those places are sharing one central kitchen.
It also may explain why they've kept more or less the current menu in the interim, just removed the "branded" names from the drinks (and I suspect using different beans too).

GG's Chicken Shop doesn't even mention the Anaheim outpost on their socials or website, and Seoul Sister looks like it was especially created for Parkside Market (a la this new coffee joint).

At the Westfield Topanga mall in Woodland Hills, a bunch of relatively well-known LA restaurants and chefs have licensed their brands to Earl Enterprises, who runs the 20ish stalls of their "Topanga Social" food hall out of a central kitchen. It's a novel idea, i'm not surprised to see others do the same thing. The problem, of course, is whether Disneyland visitors really care about that kind of thing. I don't really think they do, especially with those insane prices that are undoubtedly handicapping the entire thing.

Hopefully the new Porto's can manage to keep their pricing reasonable.
