Is your "pork"sausage vegan?

Nope, it was real pork.
I was actually hoping the sausages were vegan, as oldest daughter does get a vegan brand that I really like. There were several family members there and oldest daughter and our granddaughters are the only vegans, so she decided to go with real pork.
However, the pancakes were vegan, so oldest daughter and our granddaughters had those with peanut butter and maple syrup, and a homemade fruit salad…!!! :)

Would you mind sharing your recipe for roast Gouda potatoes? :hungry:
Absolutely!

These aren't exact measurements as I was cooking for three and eyed it, so add or subtract for your needs.

__Gouda Potatoes__

6 small/medium red potatoes cut into 1inch pieces
1 medium chopped sweet yellow onion
2 - 3 cloves garlic minced
1/2 c. grated Aged Gouda
1/2 c. grated "Young" Gouda or Smoked (whatever your preference)
1- 2 tbsp Lawry's seasoning
Pinch (or more) red pepper flakes
Pepper (to taste)
2 tbsp Olive oil
1 - 2 tbsp unsalted butter
Chives or parsley to top (optional)
Salt? (To taste though the Lawry's seasoning contains it and the aged Gouda is salty in flavor)

Preheat oven to 400
Line a baking sheet with parchment
On the baking sheet toss onion and potatoes in olive oil then season with garlic, Lawry's seasoning, red pepper flakes and pepper covering evenly
Roast potatoes for 15min remove and mix/flip then cook for another 10 - 15min until the potatoes are tender (can be pierced easily with a fork but not mushy)
Remove from oven and let rest
(When you are just about to serve)
In a frying pan melt butter on medium heat then add the potatoes et al to melted butter and top with the grated cheese allow to melt and serve immediately (top with Chive or Parsley for presentation)

That sounds delicious. A restaurant my husband and I like to go to served a gouda hashbrown casserole on their weekend brunch menu that is so good. Then they turn any leftovers into a soup on Monday, and they top that with bacon bits. It is all so good!
