So it appears that you can be arrested for squirt gun use. A couple of articles that were found.

SIMCOE, Ontario (WKRC) - A woman was taken into custody and faces an assault with a weapon charge after she allegedly accidentally squirted a neighbor with a water gun while playing with a child.
58-year-old Wendy Washik was arrested on Sept. 1 after an investigation by the Ontario Provincial Police (OPP) determined that she assaulted someone with a weapon.

So one can be arrested but in a NHL game if two players dropped their gloves and start beating the crap out of each other in front a sold out crowd , all they get is a-visit to the penalty box.

As for the top story, we don't know all the circumstances surrounding the squirting. Maybe there was a heated argument leading up to the squirt. Maybe it took longer than expected for the squirted victim to dry, causing the most minor of inconveniences. We don't really know.

The bottom story of the accidental squirting... that one took place in Canada.
I personally know Canadians who've spontaneously become offended at far less. Tread lightly.

Follow up, a side discussion to the side discussion: Would such an idea garner greater approval if renamed to something not associated with weaponry? Like Hydro Blasters or a theme-specific name corresponding to each land?

What about water balloons? That would solve the whole debate over whether this leans too closely to "weapons" or "violence" by removing the pistol/gun factor out completely. Nothing to shoot, squirt, spray whatsoever.
Just launch a water balloon at park guests who get in the way. WDW already sells regular balloons, so we're halfway there!
Good, clean, family chaos with no controversy involved.

What if I fill mine with Gatorade? Then if I claim I meant to help them hydrate and just have bad aim they can't possibly prove I'm lying. Why else would I put Gatorade in my water gun?
How would you like it if you are in a crowd and a kid just comes up and sprays that crap directly on your kids faces without warning ?

Clean up though. And no longer a take-home souvenir.

Doesn't matter where it happened or what led up to it. The point is is that a couple of people were arrested so shooting water pistols have lead to arrests. So its not inconceivable that arrests could happen at WDW.

Yeah. That's a sporting event vs a random person being attacked unexpectedly by a stranger at an amusement park. Fights on the rink occur all the time and is the norm. No one gets arrested from a beating at a Boxing match or MMA match but the injuries caused are worse, crazy aint it???.

I'm no lawyer, but H2O assaults seem exempt from legal action. You never hear of anyone taking rain to court. This tactic should be a win-win for Disney.
You are ignoring the difference between rain and someone shooting water in your face. Rain is an act of god, someone shooting water in your face is intentional. It only becomes a question of whether you would be charged with assault or battery... but regardless of that, the person could sue you for it and at some point they would also sue Disney for failing to take necessary steps to protect guests from the unwelcome assaults (like not allowing water guns).

You also have to realize this is Florida and people have jumped other people and beat the hell out of them for a lot less than getting shot with a squirt gun.

What if it is not just water?
That would be a very likely problem. If you were lucky it would just be urine or food coloring... but I could easily see someone putting acid in a squirt gun and causing some serious damage. If this was happening in the UK I would be amazed if they didn't have people using acid, I'm not sure why but when I hear of someone getting acid thrown on them it is almost alway in the UK.
