Be sure to let them know that she has an allergy. They are very good with this. I'd let them know before you come and they will send you helpful guides.
It's not so much WDW, but everywhere else. Too often people pull the allergy card, when they just mean they don't like something (which is a big PIA for the kitchen). It's like telling McDonald's you are on a low salt diet so you need fries with no sale just so you get fresh fries. Or telling people you have a service animal when you just want to bring your poorly trained dog with you. It makes things difficult for people who actually do have problems with food, or have service animals.
Mushrooms seems to be one of those things. Most of the time, if she askes if there are mushrooms in the dish, she gets a "yes, but you wont taste them, they are chopped fine, or they are mushroom powder" response. That is actually worse. If they are big pieces, and have not been in a braise for hours, she can pick them out and be fine. The powder is the worst for her.
