When plans come together - PRICELESS!

For me, planning Disney trips, no matter how many times I do it, is stressful. But I love it when plans come together and all work out.

My family is planning a trip for Easter weekend. We haven't been to Disney in a couple of years since we don't do Disney during school breaks or summer and my daughter was in high school planning for college. We didn't want to spend the money not knowing what college would cost and she didn't want to take time out of school in her junior or senior year. So come her first year in college, we find out that the school is closed for Easter weekend (long weekend - Thursday - Monday). My husband and I decide to plan a surprise trip for DD. We also decide she can bring a friend from school (to be decided later after we tell her about the trip) so we book a 2BR at AKV Kidani (our home resort).

We were too excited so we told her a month after she started school instead of waiting until Christmas as we were planning. She was really close to one friend, so DD invited that friend. DD friend was excited too and the family was on board for paying for flight and tickets. GREAT! DD friend bought ticket and all was good. We booked our dining reservations:

Thursday - Dinner at Liberty Tree Tavern (DH choice)
Friday - Dinner at Yak and Yeti (my pick)
Saturday - Breakfast at Chef Mickey's (character breakfast pick for DD friend); Dinner at O'Hana (DD choice)
Sunday - Dinner at Le Cellier (all of us chose this one)

Fast forward to Christmas break...DD friend says she can't go due to family issues - so now DD needs to ask someone else - which is not an issue because she had another friend she wanted to bring but couldn't without messing up all the dining plans. So the new DD friend books flight and tickets. She was able to get on our flight and paid less...hmmm...OK. Another wrinkle - she's vegan. Notice our dining plans? We're meat eaters...so I do research and find that most places will make something vegan. I was worried about Liberty Tree, O'Hana, and Le Cellier. I've heard good things about vegan food at O'Hana. Liberty Tree and Le Cellier will make something vegan, but will it be good? I think we'll roll the dice and see how it goes. We can always go to a quick service and get something for DD friend if she's still hungry.

Today was our FP+ day. I cannot ride certain thrill rides anymore because of a medical condition, so this trip will be a little different. All of my family (including me) loves the thrill rides. DH said he won't ride them if I have no one else to hang with - even though I insisted that I do not mind - I'm just happy to be at Disney. I love to take pictures and wouldn't mind alone time to do my photography, but this makes DH feel better so I agree. But this means we need to split up for some FP and risk us going on some rides with FP that DD and friend will want to go on as well. I can feel the stress coming on again.... Not only do I have to worry about that, I have to keep our dining plans and park schedule in mind. We are doing DHS for only a 1/2 day. We want to head to MK after since we'll only have Thursday afternoon at MK (that's the day we fly in).

Here's what we ended up getting:

Thursday - SM (DD and friend); DH and I have Buzz Lightyear; SplM (all 4); PoC (all 4)
Friday - KS (morning - all 4); EE (DD and friend); DH & I have FotLK; FoP (all 4) - SOOOO excited to get this one!
Saturday - ToT (all 4); TSMM (all 4); Indiana Jones Stunt show (all 4) - since we couldn't do TSMM AND RNR
Sunday - Soarin (all 4); MS (all 4); Short Film Festival (all 4) - this one is questionable - not sure what else to get and we've never done this one.

After booking the FP+, we were going to have an issue getting from Chef Mickey's to ToT by the end of our FP window. We realized that we were only doing Chef Mickey for the original friend - so do we still have to do that one? Well, we changed Chef Mickey on Saturday morning to breakfast on Easter morning. We couldn't get anything at Epcot, so we decided on Boma at our resort. This is a bonus because I've heard that there's many vegan friendly options here. Not sure about the Breakfast buffet - but there's always Mickey Waffles if they don't have other vegan options.

The only thing I have left to stress about is the day we arrive. Our flights lands at 8am - so I'm hoping we'll be able to be at MK by 1:30pm which is when our first FP window ends. I'm also worried this will be a little too jam packed, but that's what the family wants. We're going back in October and staying at BCV without the kids for F&W - that should be a more relaxing trip - and we're only planning on going to Epcot for that trip...

Does anyone have any comments/suggestions for the vegan meals at our dining choices? Any info would be most helpful!

My step-daughter is a vegan and she always tells us don’t worry about a restaurant we choose to meet in for a meal. She says she is used to living with meat eaters and she knows what to order. Also Disney is great working with guests with diet restrictions. I would send your daughter’s friend a copy of the menus before the trip so she can take a look. Also when you check in and when your server comes to the table let them know. My mom doesn’t eat beef and they customized her chicken dish at Le Cellier.

Thanks for the info. Do you think we should call ahead about the special diet or is telling them when we get there is good enough?
