What will happen to the old Fort Wilderness cabins?

When they replace the Fort Wilderness cabins, will the old ones be demolished on-site or carted away in one piece?

I would assume they will be demolished. Disney usually goes the route of doing an onsite tear down.
I don’t think there’s a precedent for this though. Plus the turnover for this project is pretty tight. The DVC cabins are meant to open next year, and there’s no sign they are taking any existing cabins out of service yet. They’d have to do a loop at a time to demolish and clear.

It will be much easier to simply take them out and replace with the new ones.

Well that will be determined on the stability of the structures and how transportable they are. Not all structures can be raised up and hauled out without guarantee that they can be easily moved without debris or crumbling sections.

I'd take one (er possibly be interested in purchasing one). If you've got the land for it. - You can either keep it "as is" (with some improvements) for a guest quarters. Or completely gut it and turn it into one of many things: Home Office, Man Cave, etc. I'd probably do the latter.
