What special moments do you do?

I'm visiting wdw in August...I know, bad time to go but we have kids and have to work around school hols, plus we are going the last week so hopefully it won't be too bad (I'm feeling very optimistic)
Last time I went (6years ago) we didn't research into wdw and I know we missed A LOT!!
This time I've researched a lot but I wanted to know what extra things you do to create those extra special memories,e.g walking along the beach at night, going to beaches and cream for their ice cream sink or having a picnic on Tom sawyer island.

Don't know if this is a special moment, in the parks, when the DW gets mad at me or the DDs, we forced to have a photo taken by a cast member. Needless to say, we end up with a lot of pictures.
