Walt Disney: The Triumph of the American Imagination by Neal Gabler is a very good biography of Walt Disney.

If you want an interesting examination of Walt Disney and what it was about him that lead to his ambitions with Disney World then I would highly suggest Walt Disney and the Quest for Community by Steve Mannheim. Looking to gain greater insight into EPCOT, Mannheim examines not only aspects of Walt Disney's life but also other urban design theories that likely influenced "the most important part of [the] Florida Project."

Best book I've ever read: Keys to the Kingdom, by Kim Masters. It's a history of the Michael Eisner years.
