I know there have been numerous parking threads but I'm looking for a quick answer. I know resort parking is for guests. However, can you utilize resort parking if you use valet parking (Grand Floridian, Contemporary, Polynesian) and pay the $25 fee to hop the monorail to the parks?

Yep of you pay you can do as you wish. 
But be careful when it's busy the lots could be full for valet or they will limit it to just ones that have dining reservations or are hotel guests esp at the monorail resorts.
The Epcot resorts I have never had a problem with using valet ever but I have heard others have even for valet at the monorail resorts recently.
