AK is relatively flat. There are some areas that you will have slight upward grades in spots. But theres nothing that makes you struggle uphill. I dont know what her limitations are but I dont think youd have an issue. There is a lot of walking and be prepared for the heat and humidity to factor in with her ability to keep going.
FYI - if it matters any, AK, while not very hilly at all, I would say more gradual slopes than anything, doesn't have smooth surfaces to walk on. They did their best to imitate outdoor surfaces with animal tracks, aged villages, cobblestone/bricks, etc so just be aware.
Animal Kingdom is a big park. You can fit the other three parks inside it. Like what others said, the surface isn’t smooth. Make sure there aren’t any trip hazards. Enjoy the trails
..... I find that greatly misleading and has been more or less popularized by Disney itself over the years since 1998. I'm not calling that factually, technically incorrect but it can mislead since in 99% of guests concern themselves with the usable/walkable park areas and spaces.
