Today's near perfect omelette

OK, I am working hard to lose weight and get in better shape for our next trip. Have cut back on carbs and am now eating breakfast that I used to skip. Made a very good omelette today but am starting to get bored with omelettes and frittatas and such. Anyone have any good low-carb (am type 2 diabetic so has to be low sugar, low carb) suggestions to fight the breakfast boredom?

Just a thought . . . what about a toasted whole wheat English muffin, 2 pieces of crispy, cooked bacon, and maybe even just one slice of melted cheese (put under broiler for less than a minute). If you like things a little spicy, you could add a little hot sauce. (I don't know if whole wheat is low carb; I just assumed it was probably better for your condition than say, white flour breads.)

Anyway, my breakfast suggestion is far from brilliant, but might be good for a change, perhaps once in a while. Good luck to you with your diet; it must be a challenge to come up with recipe ideas when you're also balancing the type 2 diabetes restrictions in what you can select.

Thanks for the suggestion. I have to mostly avoid bread in general. Eating right is a big challenge, especially when I like bread, sweets, potatoes and other carb laden items so much. I do like hot sauce, as you can see in the pic. I will give your suggestion a try!

I don't know if you like sweet stuff for breakfast (I don't, but from time to time I do.) But sometimes, I like Fage Greek Yogurt with toasted almonds and honey. But, if you are Type II, maybe you could eat it with berries or bananas with almonds. It will be a little more filling if you chose the 2% Fage over the 0%.

Another thing I make is what I call "Savory Asian Oatmeal." I will make Irish Oats, stir in some Ponzu Sauce or Soy Sauce and Sriracha, top the oatmeal with a poached egg and green onions (sometimes a bit of Toasted Sesame Oil.). I don't know how that works with your Diabetes; but it is a whole grain, so you get the slow release of carbs.
