To Halloween/Animal or Hollywood Studios?

So... we are surprising our 8yo and 4yo with a trip labors date weekend. We picked this weekend back in January. Our 4yo should be over 40in by then and the purpose was to celebrate birthdays and ride the 40in rides all together. The 4yo is crazy about StarTours. In comes Star Wars land, Halloween Parties, and now Food and Wine (though two we anticipated). Now we are wondering if we cancel HS day and do AK instead. Of course, the 4yo has less there still because of height. We also are considering a Hollween Party but we planned to be super chill this trip and that makes for a LONG day. We for sure will do Epcot and MK for full days. Right now we have three day tickets. Arrive Thursday late night and check out Monday am. Thoughts on what makes sense? Oh the crowds!!!

Any way to expand to the full week?
I wish! We are already taking the 8 year old out of school for 1 day (maybe 1 1/2). We only have Friday-Sunday to play. I had thought about AK in the AM and Halloween in the PM but I just don't want to run them ragged. They also wanted pool time, which would be hard. This would be their 3rd trip in 1 year, so its not like they haven't gotten a good Disney feel. My youngest just really wanted to rid big kid rides and so we are going to surprise them.

Personally, I'd do a pool day with Halloween party at night, but that's because I've never been and I don't mind paying extra. :)

Re: HS, I think I'd skip. Labor Day crowd + SW:GE crowd seems like too much for me, especially if you're going for "super chill." But maybe if you get FPs for the rides kiddo wants most and then assuming you might not do much else there, it'd be ok?
