With a four day ticket you get four admissions to water parks/Disney Quest/etc... Five-day ticket gets you five, etc...

so can I do four parks and do a water park on the 5th day? Or can I go to a park in the morning and a water park in the afternoon?
You have 14 days from first use to 'use up' the ticket.

If you go to the theme parks on your first four days of vacation, you have ten days remaining to use your water park days.

If you go to a theme park in the morning and a water park in the afternoon, you'll use one of your four park days and one of your water park days.

If you go to Blizzard Beach in the morning and Typhoon Lagoon in the afternoon, you will use two of your water park days as the 'water park and more' side of the ticket does not allow park hopping.

If you were to purchase non-expiring tickets, the wp&m part would also not expire. You can use up the theme park side of the ticket and your remaining water park admissions will still never expire.

Consider pricing out a large (e.g. 10 day) pass with water parks that doesn't expire. Then, like listed above, you have water park entry for years to come. However, it really depends on how many days you visit at a time. For us we do well and still have many water park passes left from 2009.

with a four day am I able to go to the water park on the 5th day

Yes. You would be allowed to enter parks 4 times and waterparks 4 times over the course of 14 days.(assuming you have the water park option).

Example1 (there are many many scenarios)
Day 1 park
Day 2 park
Day 3 park
Day 4 park
(Note after day four you have no more park tickets and all 4 water park tickets remaining)
Day 5 water park
(Over the course of the next 9 days if you are still there you can use the remaining 3 water park tickets)

you would need a 5 day pass that includes the water parks and more option

Sorry, but this is incorrect.

What the OP seems to be asking is with their 4-day MYW plus Water Parks can they do this:
Monday - theme park
Tuesday - theme park
Wednesday - theme park
Thursday - theme park
Friday - water park

The answer is *yes*.

Heck, with such a ticket she could also do this:
Monday - theme park
Tuesday - theme park
Wednesday - theme park
Thursday - theme park
Friday - water park
Saturday - water park
Sunday - water park
Monday - water park

But a word of warning to the OP: If you're buying the WP&M option solely to go to a water park once, unless you're also getting the Park Hopper option to use during your theme park days (which lowers the add-on price of the WP&M option) it'll be cheaper for you to simply buy a 1-day water park ticket separate from your MYW park ticket.

Edit: LOL looks like @BrianV and I were typing the same thing at the same time. :)

And to clarify [confuse?] matters more:

With a four-day with waterparks and more you could:

Monday - theme park/water park
Tuesday - theme park/water park
Wednesday - theme park/water park
Thursday - theme park
Friday - water park

or

Monday - theme park/water park/other water park/Disney Quest
Tuesday - theme park
Wednesday - theme park
Thursday - theme park
Friday - water park

etc...
