i know this might be a little weird to bring up but have noticed more restaurants have installed digital menu boards specially at magic kingdom. granted its alittle weird to have a restaurant like pecos bills with digital menu boards but the theming is well done. is this something we can expect to see more at other restaurants or is it only going to be a magic kingdom thing as usually.

I expect you will see them popping up all over the place. They are already common in restaurants outside of Disney as well.

Next we'll be given iPads with menus on them at table service restaurants

I wouldn't count that out. You will at least start to see servers on iTouch (or similar) systems. POS systems are already moving in that direction, have been for the past few years. You will also see registers replaced with iPads / Tablets coming, I strongly suspect.

Being tested already

Maybe only tested at Disney, but Radient / Aloha, as well as NCR and many other POS vendors already have these solutions built and are selling them on the restaurant market.

NCR has a huge tablet / iDevice push coming down the pike, they just do a terrible job marketing it when compared to some of the other vendors. Their solution is impressive though.

I found the one at Pinocchio's Village Haus to be annoying. It rotated through the selections far too quickly to read. Everybody was just using the printed menus that the Cast Members were handing out.

Who wants to eat at the Village Haus anyway?

Somebody who really didn't want a burger at Pecos Bill's or Cosmic Rays's and doesn't make rezzies. The meatball sub was gross but the flatbread sub wasn't the worst.

There's always Cosmic Rays! <grin>

But, yeah, I don't blame you for staying away from Pecos. Did it once, had my fill.

Try the Waffle Sandwiches at Sleepy Hollow...

I made the mistake of ordering the meatball sub there in 2010. I was so upset...that place used to be my favorite as a kid...

I highly doubt they will use tablets as menus that are handheld outside of tables service, where a wait staff can closely monitor the situation. Plus they will be pw locked to the menus and feature tracking software.
