Suggestions? First time with kids

Here is our scenario:

Me and my DH both have not been to WDW in at least 20+ years I know it's been 23 years for me. We finally decided to take the plunge and take our kids Ages will be 7 and 2. This is what we are doing:
We are staying at Disneys Fort wilderness Campground with our own camper. We are going end of May (arriving Memorial Day)and leaving June 4th. My DD is actually turning 7 on June 1. We already set up our MB online and I already booked Cinderella's Royal Table for lunch on the day of my DD birthday. Other than that I am a little confused to everything else. I am a planner and when I have a schedule I like to stick to it which worries me as I am concerned I may "overschedule" us which will cause me a lot of anxiety and will make this trip a mess especially for my DH LOL ANy suggestions as to what rides would be a "must" for my kids (both girls with the 7 yr old loving princesses) and which ones that won't be a problem if we never get to. I already plan on going first thing in mornings, eating breakfast in the camper, packing snacks while we are there and even possibly sandwiches. Coming back around 1 for nap and rest time, eating an early dinner around 5ish then heading back to the parks with more snacks on hand. I will have a stroller for the little one and obviously diaper bag and small cooler. Any other tips for me would be greatly appreciated. I am a little confused on how this whole FP+ thing works and the child swap too. Though most of the rides that the 2yr old can't ride probably won't be a problem for all of us.

If anyone knows anything about Fort Wilderness too that would be good for us to know, that will be helpful too. Thanks in advance. We are excited!! Just don't want to be stressed :-)

Welcome aboard! What I'm going to provide you with is simply my opinion as I went last year with my 2 boys age 8 and 5.
At the MK, we rode Peter Pan first! The line gets crazy.
At Studios, use one of your FP+ for Toy Story Mania. When they issued paper FP's, this attraction would sell out by like 2pm.
For the child swap, simply let the cast member working at the entrance of the ride you need to do a child swap and they'll let you know what to do.
The EPCOT World Showcase is the place to meet lots of princesses. Be sure to search the Disney site under "Entertainment". It will show the locations and times for each character.

Thanks so much! I can understand the peter pan ride. I downloaded the app on my phone and have been playing with it and noticed that that ride seems to have one of the longer wait times ;-)
