I'm looking to book a stay during early/mid January. How much do you have to put down as a deposit when you make the reservation on the phone now.

Are you limited to the restaurants you can use when using the dining plan? Trying to do the calculations to see if it's worth us doing it when we visit in April.

You are limited to certain restaurants. Here's a link to Disney's official list [pdf]. A lot of fan websites have done their own analysis and in the end it really comes down to how you want to enjoy your restaurant experience. We're getting the quick serve option (2 Quick-Service meals + a snack) as part of the Jan-March discount promotion at the value resorts. I wouldn't pay for the dining plan if it were not part of the promotion. If we go to a character meal or dinner show, we'll still have to pay for those out of pocket.

If you do end up with the plan, I always asked a cast member what combinations of things we could get. It was the off-season and they were more than happy to oblige. The result? Pretty much every meal was more food than we could eat.

Keep in mind, that 2015 dining plan brochure restaurant list isn't quite complete yet. I'd go by the 2014 brochure for now, they aren't usually finalized until the end of the year.
