I'm planning a trip to the world in May 2011. I know Star Tours 2.0 is supposed to open this Spring or Summer. Has anyone heard any rumors if it will be open by May of this year? I'd really hate to get there and miss it by a few weeks!

My *guess* would be you'll get lucky and get to ride in soft opening before you leave (fingers crossed!!). I was there the week before Space Mountain "officially re-opened" and it was open all week.
