So What to do Next?

So we are well into the planning stage of our trip. Now I am trying to make sure we make the most of our time and accomplish as much as we can. I was wondering what a good trip Itinerary would be for us. It will be me and my mom, both thrill seekers. We are pretty much down to do whatever, unless it spins. We will be there 9/14 checking in that night and then leaving 9/21 at night. Will these dates be less crowded? or will we be facing crowds, that is my biggest fear. We are staying at All-Star Sports, I don't know too much about our best transportation options to the parks and DTD. SO far this is what we were thinking of doing:
9/14 Fly in, Land, Dinner and watch the monday night football games at a lounge of a different resort? Any Suggestions of which resorts to go to or make ADR's for?
9/15 Universal Studios/Islands of Adventure. Best transportation options there and back?
9/16 Animal Kingdom that morning/afternoon using the magic hour. Splitsville Resevations that night and then Cirque. What time should we leave to go to AK in the morning and to go to DTD if we want to be down there around 6:30?
9/17 Possibly doing one of the Water parks, renting a jet ski, mini golf, or even hitting a park. Lunch Reservations at BOG. Any suggestions on how to utilize this day? We want to do ESPN Club for the Thursday night football game.
9/18 MK in the morning and then heading over to do Epcot that night. This is the only time we will be in Epcot. We don't care for it too much. We only want to do Test Track and Soarin. We have reservations at La Hacienda and then watch illuminations that night.
9/19 Water park during the day. MK at night and to use magic hour. We plan to see wishes and the electrical parade this night. We have Plaza reservations at 7:35
9/20 Hollywood Studios. We have Mama Melrose Fantasmic dining reservations this day. Plan to watch fantasmic and utilize the magic hour.
9/21 We leave this night. We have no idea what to do during the day this day. Maybe hit up a park if we missed stuff to do or walk around. Not sure. Any Suggestions?

So I just have no idea what to do when while we are in the parks. I don't know what to utilize fastpass+ on. Im not even fully able to understand it.

Unless you're booking FP for Everest, I'd be there as soon after rope drop as you can. You need to get a Disney bus from AK to a resort to pick up a DTD bus (can't go direct) so you should allow at least an hours travelling time

17th - I'd make this a full MK day as you're already at the park for BOG
18th - Water park or whatever until mid afternoon and then hit EPCOT

I think eveything you have planned looks great! My concern is if anything comes up to get you off track, it is going to mess up the rest of your day. I think you need to give yourself more room to breath and relax:)

Having said that, you should be going at a great time that shouldnt be too busy. The Monday night game would be fun to watch at Big River Grille and Brewing Works. You could see the Boardwalk and the game! Happy planning!

That time in Sept should be very nice in terms of crowds, but fair warning - it will be hot/humid. If you aren't planning to rent a car, then you'll need to use a taxi, Mears shuttle, etc to get to Universal the first day. Otherwise, the Disney bus system will get you to the WDW parks and DTD. I don't know your level of experience with Disney parks, but I'd highly recommend at least picking up a copy of the Unofficial Guide. As for FP+...

Pay the $12 for a subscription and let them recommend your FP+ plans based on the park days, etc. Just my opinion, but it is well worth the cost unless you are using an agent, or just like to do all the work/research yourself.

Thanks for all the feedback. We do plan to take a break between AK and DTD that day. My biggest stress right now is trying to figure out what rides we need to do FP+ for an which are good to hit the standby line, at rope drop, or during EMH. I know Seven Dwarfs we were thinking of hitting at rope drop but is it better during EMH? I've looked into touring plans and was thinking it would be a good option.
