Last night I was watching the "Disneyland 10th Anniversary Show" and saw the person inside the Sleepy costume take his head off.
The show is on Disc Two of the "Disneyland USA" DVD. Chapter 4 at the 17:29 marker. Right after Mary Poppins finishes dancing and takes off in flight over the backs of the chimney sweeps, the guy inside the costume begins to take off the head.
The guy in the costume moves his arms inside the rubber head and takes the head right off. You can then see this person looking up into the sky where Poppins flew for two frames. Sleepy is on the extreme right hand side of the screen, as you are facing it.
I thought this was hysterical! I'm sure it was so quick that no one caught it in editing back in '65. I just happened to notice it out of the back of my eye, because Sleepy is not the focal point of this scene, Mary Poppins is. In fact, I had to back-track to make sure I'd actually seen the guy take his head off.
