Restrictions for cast members

I know there has to be some sort of presentation that Disney wants you to give off when people look at you. What is like the length of hair that men are allowed to have?

can't cover your eyebrows or go over your ears, and it cant' be longer than the botom of your ear.

In the detailed Look Book, it discusses the covering of tattoos. One option was to apply makeup (the cast salons sell stage makeup for that purpose). So that is completely permissable.
