Does anyone have the recipe for the breakfast potato casserole at Akershus?

Thats the same one I have but I thinks its wrong beacuse after 2 hours in the oven the potatos were still not cooked. I think maybe they have to be cooked before baking but the recipe does not say.

How large is the dice? A whole medium potato should be baked in that time.

You may want to try par boiling the diced potatoes, but not the shredded ones.
