Weekdays are quieter than weekends, but this time of year you should be fine most days.

One advantage you already have is by going during the off season to beat the crowds. You can enhance that even more by avioding the parks with extra magic hours.

The one that has the extra morning hours for the day will be packed until early afternoon when the park begins to thin out as people park hop.
And the park with evening extra magic hours will be packed that night.

Check the schedules and plan around them. At this time of year you'll fare just as well in the park that closes earlier because you won't be spending the extra time in cue lines at the busier park. Instead you'll often find yourself walking right onto the major attractions.

So do you think that it is less crowded on the days before or after the emh? For example say Monday is EMH at MK, would you be better at MK on tues or wed? just curious. we are going during the busiest time of the year ..we will be at parks opening or before w/ breakfasts

What parks

I went to touringplans.com. They tell you which parks are busier on what days. Obviously the Extra Magic Hours parks are the busiest, and there is a golden rule that says you should never start with Magic Kingdom on a Monday. You should also take into consideration what nighttime parades you would like to see and figure out which days it will be happening. And finally, consider the park hours. There were some parks that stayed open an extra hour on some days (not EMH) for no obvious reason.

That sight also gives you ideas of the best times to go. I remember not too long ago that you could find level 1 crowds (very little wait times for E rides), but now the smallest is like a 4 (@ 45 min. ave. wait time on the popular rides). I'm holding my breath to see if they're right when we go Nov. 26-Dec. 2.
