I know the Magic Kingdom has a special fire works viewing area down at the Plaza Pavillion terrace that you can call in advance to reserve. Not too many must know about it, because it rarely has more than 20 guests a night.
Personally, the best place to see the fire works at the Magic Kingdom, is on the Tomorrowland bridge. You'll have Tinkerbell fly right over you, and from that angle it appears the fire works are going off right over the castle.
