If you are going to WDW for and extended stay and think you may wish to park hop on one or two of the days but not all, is it not cheaper to buy a pas with a couple of extra days then to get the park hopper option? When you visit the second park in a day just use one of your extra days. Is there a problem with my logic?

Disney does not allow you to use 2 days to get in to 2 parks in the same day. They only way that you can get in to 2 parks in the same day is to get park hopper.

Think of the days on a MYW ticket as "calendar days" not "park admissions" and the whole thing is easier to comprehend. In order to get into more than one park on any given *calendar day*, you must purchase the Park Hopper option.
And as Captain Hook sugegsted, consider an Annual Pass. At around the 10-11 day mark it becomes a better deal, even if you don't plan on returning again within a year.
