Just some suggestions, sometimes just going on the fly isn't bad at all. Also, you may not be hungry for big dinners after lunch. Go with the flow, it also depends on the park you are at.

Gotta throw Chef Mickey's for dinner into the mix. Earl of Sandwich is very good for lunch or dinner. You could also try the breakfast at Fort Wilderness, which I have heard is very good.

One thing I would suggest is that if you are having a big breakfast like O'hana's and dinner at another sit down restaurant, you might want to make lunch counter service because I know every time we eat buffet for breakfast I usually am not all that hungry for a big lunch.

I would recommend in Epcot Le Cellier, Chef de france, Nine Dragons for either lunch or dinner. 50's Prime time in MGM is excellent too.

I prefer breakfast at WCC than dinner.
Try Artist Point for dinner one night instead of WCC

I'll agree. Breakfast - all you care to eat skillets are a must for us, lunch is good but we really don't care for the skillet BBQ dinners...they are good, just not what my family likes.

Dinner at the Yachtsman or Concourse Steakhouse is a must for us. Dinner at the Liberty Tree Tavern in the MK and maybe lunch there too. Restaurant Marrakesh at Morocco in EPCOT is a must for lunch as is Tusker House in DAK.
Cosmisc Ray's is good for lunch or a small dinner (we only do one big meal a day). Love Chef Mickey's for breakfast and want to try dinner there. Cape May Cafe is a good bet for a seafood buffet also.
