I vote for cash to try to teach your young-adult some responsibility.

In 1992 my parents sent me on a school trip to NYC for a few days, I was 15. They gave me some cash to pay for incidentals and lunches. We visited Times Square in the 90s before Giuliani cleaned it up. OMG.

My parents weren't chaperoning, just our pushover French and Italian teachers. Nothing terrible happened. I bought lunch. I bought a poster at the Met. I bought a shell necklace at the United Nations visitor center. Saw a play on Broadway. Didn't fall off the top of the WTC. Learned to be responsible for myself for a few hours. The end.

Hi, next month we will be traveling with a high school group (im chaperoning) The only thing the trip isnt covering is lunches-I am concerned that if I hand my child a bunch of cash, various disasters may happen (Im sure we will be seperated) I dont think the students will be given wristbands and I am wondering if a prepaid american express is the way to go?

I have a 13 year old son and I would not send him with cash either. I'd worry about him losing a credit card also, but that's easier to keep track of than cash.
