Does anyone know the policy on service animals at the DVC resorts

I would call the resort or look on the Disney website and search Service Animals or Service Dogs. I believe the resort only recognizes and accepts officially trained and identified Service Dogs base on ADA regulations. I'm pretty sure Emotional Support Animals of any kind are not allowed. There are stories however of people purchasing Service Dog vests online for non-trained pets.
