I have a problem. Im supposed to be leaving January 2nd and the person I'm going with just said she maybe not be able to go now. Would it be possible to still change the reservation to another person and get a new magic band and documents in time? The call center is closed right now so thats why I'm asking here!

Relax. You can change to another person. 
I don't know if they'll mail another band that quickly or not. They might. If not, your traveling partner will get one when they check in - grey is the default color.
If they're flying, your new person can't use your old person's ticket. But at Disney, it's all good.
