The Switch can barely handle Cities: Skylines, and Planet Coaster is much worse optimized. I think it's for the best unfortunately.

Edit: After literally being silent on the progression of the console release a year after they made the announcement the game was coming to consoles, they just put out this announcement

It would melt the Switch. Cities: Skylines already comes close to doing so.

Switch most definitely cannot handle this game. You have to remember Switch is also handheld besides having a dock, making it have a lot of limits compared to other consoles.
