Party of two for table service

OK it's been a loooooooooooong time since I've posted so forgive me. I am a pretty seasoned Disney traveler having visited WDW 12 times and DLR 6 times. I know what restaurants my family and I like and I am fully aware of the importance of reservations especially for table service. I'm doing something different this time however. I take each of my kids on a Father/Child solo trip with no other family for their 16th Birthday. I let them pick where (continental U.S.) My daughter has chosen WDW. So, that being said I have never in all my travels visited WDW parks with just 2 people within the online reservation era. The reservation slots coming up are none to appealing for our visit at the end of May. My question is, is it still worth locking in something even though they are less then favorable or can parties of two walk up and get seated relatively quickly. I'm tempted to just "wing-it" for once. I'm talking about places like SciFi, 50's Prime Time.Coral Reef, Beirgarten, San Angel, La Cellier, Rose N Crown Skipper Canteen etc etc. Any feedback would be great.

1) do not let online reviews deter you. 90 percent of the time people are complaining about nothing. A disney, very few places can you go wrong with TS.

2) Absolutely book ADRs in advance. Especially for the places you mention. It is not worth the wasted time of showing up then being denied.

Of the restaurants you mentioned, the greatest chance of being seated as a walk-up are at San Angel, Biergarten and Skipper Canteen (which currently does not take reservations.) However if there is someplace you really want to dine at, make a reservation. If the available time is not what you wanted, keep checking back closer to your trip...people cancel reservations all the time and new times open up.

Le Cellier is harder to get simply because it's small, in-park and popular with some. If you can get anything for the end of May at this point, take it. But even if you do or don't, keep checking. Because they now have a no-show fee, people do cancel their reservations if their plans change, so spots may open up around the 45 day and 5 day cancellation deadlines for package and room-only reservations respectively. Then there might be a few opening up a day or two prior as people change their plans on the fly while they're there.
