Opinion on which of these parks which days?

Hello all! I’m so glad I found this forum! ☺️

I’m a huge Disney fan, been to WDW a handful of times. I’m stuck on one thing though, as I’ve never experienced this before. We’ve always gone Sunday to Saturday (so all parks are during the week).
We’re planning a trip the week after Labor Day. But because of the timing of when my in-laws are joining us, it’s affecting what days we can go the parks.

Basically, because of the reservations system now, I have to assign Magic Kingdom, Hollywood Studios and Epcot to Saturday, Sunday and Monday. I’ve been to Epcot on the weekend during Food and Wine, I don’t care for the weekend crowds. But if I put it Monday, those other two parks will be on the weekend. My husband is coming this time (he’s refused the past few trips due to crowds, but he hasn’t been since all the new stuff like Avatar and Star Wars) So I really want to make it nice for him. I think he’ll like Hollywood studios best. But also, I don’t know if the Halloween party at MK will be Saturday? Which days would you assign each park?

I was thinking MK on Saturday if that party is going on, because maybe folks won’t come until the evening so crowds won’t be as bad? Hollywood on Sunday because maybe in the evening it won’t be bad because of it being a school/work night. Then Epcot Monday to avoid food and wine crowds.

Or should I just deal with Epcot Saturday, MK Sunday (with that same theory about school/work night crowds that evening) and Hollywood Monday since it’s so popular to minimize crowds since it’s a weekday?

OP, I give you credit for planning so diligently and in such detail, but based on when you're going, I think you'll find that there's little need to work around small daily crowd fluctuations in one park over another.

You'll be visiting during an incredibly low-crowd time of year (I say this based on our late-August 2021 trip, wherein wait times were so low we could basically do whatever we wanted, whenever we wanted), which gives you far greater flexibility. Go ahead and avoid Epcot on the weekend if you want to avoid festival-related congestion in World Showcase. Other than that, just pick the days that you think will work best for your party, or give you the nicest "flow" in your vacation. An early arrival (or arriving late and staying until closing time, by which point some of the parks - HS especially - are veritable ghost towns) and a smart touring plan will quickly overcome any little differences in crowds and wait times.
