Well, from archive footage we know there was loads of live music as well as recorded background music in Fantasyland at least.

Here's a huge tip if you're interested in Disney park music: Visit Passport to Dreams Old and New for tons of articles about the history of the music loops at both DL and WDW. A staggering amount of research went into those articles. You'll find more info about the music--and how the loops were created--than you could ever have dreamed existed online. I was amazed to learn that the original loops were created by none other than the "Voice of Disneyland" himself, Jack Wagner-- from his home studio and his extensive personal LP collection!
