I am traveling with our 6 yr old grandson. So far we have booked:
Sci Fi
Chef Mickey
Garden Grill
Ohana (2x) (husbands favorite)
Whispering Canyon
Mama Melrose

Just need 1 more to complete our meal plans. Any "must do" meals out there?

If you like ohana I would suggest Kona Cafe for breakfast! Best breakfast menu on property!

TREX if you are going to Downtown Disney
Rainforest Cafe at Animal Kingdom or DTD
Both of these restaurants I recommend for theme more than great food

Are you going to Animal Kingdom? I love Tusker House for another character option!

My son loves T-Rex at Downtown Disney. It's a non-Disney restaurant (that still takes the dining plan, if you're on it). The atmosphere is a lot of fun- especially if he's into dinosaurs!

He'd enjoy the characters at Crystal Palace, but maybe a country in Epcot, like Biergarten?

I would take him to TREX if he likes dinosaurs. Will Sci Fi Diner offer the Star Wars themed breakfast when you go? If so then he might enjoy that. Teppan Edo might be fun entertainment for him or Coral Reef so he can see the giant aquarium.

Sci Fi was great fun and we loved O'hana for dinner. Breakfast was ok but the real draw was Stitch-my youngest's favourite character. My boys really enjoyed the character breakfasts at Tusker House and Crystal Palace. Enjoy your trip
