Are both of these meets independent of the fastpass system, meaning can I hold one for each plus another attraction in the park at the same time?

Anna and Elsa are one meet n greet. The fastpass is independent of the attractions fastpass system, so you can hold it and a ride pass at the same time.
Can you hold all three, meaning sisters, Olaf, and attraction?

Yes. On top of those, you can also hold World of Color.

Just an FYI, the best time to hit up Anna and Elsa is during the Pixar parade. I've walked right in on two separate Saturdays (!) during this time. It wasn't weird or anything. Your mileage may vary.
