Now that ROL is delayed, how should I spend this time?

We have 7 days planned at the parks for our first family trip to WDW:
Monday MK
Tues AK
Wed HS (including Fantasmic & Star Wars fireworks)
Thurs MK again (arrival around lunchtime, staying through Wishes
Fri EP (including Illuminations)
Saturday resort pool all day, afternoon and pm at ???
Sunday MK all day (last day).

Our plan was to go to resort pool all day Saturday then hopefully to AK late in the day to see ROL (this is on Saturday 4/23, day after originally announced ROL debut which is now not happening).

Which park should we now go to instead Saturday afternoon & evening, Epcot or HS? Or should we do MK even though we'll be there the entire next day? By Saturday we'll have spent full days in all parks so it's a toss-up. Since we have 7-day tickets we would like to go to a park (versus Disney Springs or a resort). Which would you choose? Kids are 5 & 8. Thanks!!

Use the time to actually slow down a little and actually enjoy your trip. Seeing and doing it all is not possible and trying to do so in one trip is going to be miserable.

We'll spend most of Saturday at the pool and some breaks built in, not every day will be a full day at the parks. Definitely want to soak this time in! :) Just wondering if we would like to go to a park for dinner and to catch a few more rides, where you would go?

I agree with the above-posters. I would recommend you leave yourself some unscheduled time toward the end of your trip so that the kids can go back and do whatever it is they fell in love with. I'll tell you, that has changed for our family every trip! When my DD was 3, we went back to MK every single day to ride IASW  But, she was obsessed with it, and so we just rode it over and over again. The next trip she was obsessed with Soarin, and so we were in Epcot nearly every day. It may drive you crazy (it still drives me a little nuts to do it), but I would suggest you leave that time open. For our next trip, I have an entire morning left open just so the kids can do whatever they want. I would just plan to grab QS for dinner wherever you end up, and just play it by ear.

If you must schedule something, though, then I would consider going to Disney Springs that night. Maybe ride the balloon ride? Or you could go putt-putting? Otherwise, my family likes to visit the Beach Club and eat dinner at Beaches and Cream and they also like going to Ft. Wilderness and doing the camp out with Chip and Dale. And, depending on how old your kids are and when you're going, when I was little my parents used to take us to the movies at DTD where we would see the newest Disney movie. It may seem counter-intuitive since you are in WDW, but I remember just being enamored with the fact that I was in WDW watching a Disney movie! Also, it was a relaxing activity after many days of overworking ourselves, which my parents liked.:)

When we're in Disneyland in about a week, we're going to go see The Jungle Book for this exact reason :)
