No more Coronado springs quick service credits

Hi all,

I'm planning my first trip to WDW in November and will be staying at Coronado Springs.
I'm looking into getting a quick service dining plan, because I like the convenience and I'm currently doing the math on whether or not this would be somewhat worth it. While digging a little deeper, I found on the Disney website that all quick service locations at Coronado are no longer accepting Disney dining plans as of 2020. Not having a place to get breakfast in the morning or an easy dinner on resort days really makes it a lot less attractive to opt for the DDP.
Anyone any idea why Disney will have chosen to remove El Mercado from the list of participating restaurants? Any good alternatives here?

Happens every year, contracts aren't finalized yet, give it a little time
How long does the negotiations on average take? I have a reservation for Yak & Yeti on January 25. I never went in January before and didn't even think about them having to negotiate a contract. It's too late to cancel the DDP as well.

I checked the WDW website today and it now says Yak & Yeti accept the dining plan. Yesterday, it said no dining plans accepted. Weirdly, the Rainforest Cafe at DAK says it does not accept the dining plan, but the one at DS does. 🤷‍♀️

Has anyone ever had a restaurant not accept the dining plan during these negotiation times?

apparently STK at Disney Springs isn’t currently accepting it But I don’t think there has been many times in the past where a restaurant has stopped taking the plan at all.

Are the resort restaurants not run by Disney itself? I get it for third party places like Yak and Yeti and STK, but the food court at a hotel is negotiating against who?
Disney owns the facility, but the food services are run by a third-party contractor, who may or may not be willing to accept the cost/value construct of the DDP in 2020...
